HIKIMATCHA

Frequently Asked Questions

Why the name HIKIMATCHA, and what does "SEEPIN" mean?

The word HIKI (挽き) in Japanese translates to “grinding.” We named our brand HIKIMATCHA to honor the traditional art of stone-milling matcha in Kyoto.

Unlike high-speed industrial processing, stone-grinding is a slower and more delicate method that helps preserve the vibrant color, nuanced flavor, and integrity of the tea leaves.

SEEPIN represents our quiet obsession with matcha and the ritual surrounding it — slowing down, appreciating the process, and finding beauty in simplicity.

Where does your matcha come from?

We source our matcha directly from renowned tea-growing regions in Uji, Kyoto, Japan.

Our collection includes both carefully crafted blends and single-origin cultivars such as Samidori, Saemidori, and Okumidori — each offering a distinct and authentic tasting experience.

What makes HIKIMATCHA different?

Freshness is at the core of everything we do.

Our matcha is ground-to-order in Kyoto and prepared in small batches before arriving in the United States. This process helps preserve the tea’s natural aroma, vibrant green color, and deep umami character exactly as intended.

Crafted in Kyoto, carrying a tea legacy dating back to 1860.

How should I store my matcha?

For maximum freshness, we recommend keeping your matcha refrigerated and away from strong odors.

How do I make the perfect matcha?

1. Prepare the Whisk Soak the prongs of your bamboo whisk (chasen) in warm water for 2-3 minutes. This softens the bamboo so the tines don't break while whisking.

2. Sift the Matcha
Matcha clumps easily. Place your fine-mesh sifter over your ceramic bowl and push 1 teaspoon (about 2 grams) of matcha powder through using your scoop.

3. Create a Paste
Pour a splash of your 175°F water (about 1-2 tablespoons) over the sifted powder. Gently use your whisk to press the powder down and stir until you create a smooth, clump-free dark green paste.

4. Whisk Vigorously
Pour in the remainder of your hot water (to hit your 1:30 ratio). Hold the bowl steady, prop your elbow out, and whisk quickly using your wrist in a loose "W" or zig-zag motion. Avoid digging into the bottom of the bowl. Whisk for about 30–45 seconds until the surface is covered in a thick, creamy microfoam.

5. Enjoy Your Matcha
Once the foam is uniform, gently trace the edges of the bowl with your whisk to pop any large bubbles, then slowly lift the whisk straight up from the center to leave a little mound of foam.
